Sesame Chicken Salad With Quinoa

Sesame Chicken Salad With Quinoa


  • 1 cup arugula 1/2 cucumber
  • 2 tomatoes 2 red peppers
  • 1 avocado 1/2 purple onion
  • 1 cup quinoa 2 cups of water
  • 2 skinless boneless chicken breasts 2 tbsp peanut oil
  • 1 tsp balsamic vinegar 2 cloves garlic, minced
  • 3 tbsp olive oil 2 tbsp sesame oil
  • 2 tbsp balsamic vinegar 1/3 cup sesame seeds

Cooking Directions

  1. Cook the Quinoa (just like rice - 2 cups water, 1 cup quinoa)
  2. Finely chop all the vegetables and toss together
  3. Fry the chicken in a hot pan with the peanut oil, balsamic vinegar and garlic
  4. Place some quinoa on each plate and allow to cool while the chicken also cools - about 5 minutes
  5. On top of the quinoa, place a layer of salad
  6. On top of the salad, put the chicken and then sprinkle with black and white sesame seeds
  7. (add sunflower seeds, dried cranberries, pumpkin seeds if desired also)
  8. Drizzle with a dressing of olive oil, sesame oil, and balsamic vinegar
